Today we made sugar cookies. We made cute little pumpkins with Candy corn faces. I’ve always used Mom’s recipe that she gave me years ago, and have been asked to share it. What I like to do is make the dough and frosting one day, store in the fridge and then pull them out the next day to bake the cookies. Then you could frost that same day or the next even. This makes it so its not such a HUGE task all in one day!!
Cookies
3 cups flour
1 tsp baking powder
1 1/4 cups sugar
1 cup butter or Crisco or 1/2 and 1/2 (I normally use butter)
3 eggs
1 tsp lemon or vanilla (or 1/2 and 1/2)
Sift dry ingredients
Add Butter mix & eggs and then flour. Roll pretty thin on floured board. Cut with floured cutters. Bake at 350 for 8-10 mins until lightly brown, or I like mine not really brown any.
When cool. Frost them.
Frosting
Powdered sugar
Butter
half and half
little flavoring (lemon, vanilla, orange) to taste.
Food coloring (not too dark).
Put sugar, little softened butter, flavor, and tiny bit of half and half… mix up. Add more creamer to get to the right consistency. You don’t want RUNNY frosting or too thick.
You can then decorate. For Pumpkins we like to put candy corn for eyes, Red hots on green trees, sprinkles etc…
