I’ve been really enjoying harvesting our garden this year. My dad planted this out in Piru (right where Levi lives) . We go out every 3-4 days or so to get stuff. We share with people at church and neighbors! We’ve got lots of squash, tomatoes, artichokes, berries, peaches, peppers & cucumbers. The green beans and okra haven’t come up this year well, and the rabbits are getting to them.
With the tomatoes from my Topsy Turvy and some of the garden ones I was able to make some pasta sauce. I tried out my friends sauce4 onions (from garden)
4 garlic cloves
2 diced bell peppers (from garden)
1/2 c olive oil
16 cups chopped fresh tomatoes (from garden)
1/4 c fresh oregano (garden)
1/4 c fresh basil (garden)
1/4 c fresh parsley
1/4 c sugar (I didn’t even use this much sugar!!)
1 tsp pepper
2 tbsp salt
2 6 oz cans tomato pasteSaute onion, garlic, peppers in olive oil. Combine everything in crock-pot. Cook 2-3 hours on low. Stir often. Then let cool. Put in canning jars or bags and freeze.Here is is in the crock. Once it was cooked, I blended it up some. I kept a couple bags with more chunks! I like a lot of tomato! 🙂
Made up Qt. size bags to go in the deep freeze to pull out for recipes! It tasted sooo yummy and sweet with the fresh tomatoes!
